You may well be a traditionalist and like nothing more than a wafer thin crepe glistening with lemon and a sprinkle of caster sugar. Or perhaps like me, your mantra is always ‘waste not, want not’.  So when there is a brown banana lingering in the fruit bowl, your immediate instinct is to mash the ripened flesh into a thick batter and create a batch of griddled pancakes or drop scones.

If you have a new addition to the ‘family’ in the form of a sourdough starter which craves your constant attention.  Perhaps  you are wondering what to do with yet another batch of discard?  So a batch of fermented pancakes is the perfect Shrove Tuesday treat.

To make life easier this February, we have included all of our ‘tried and tested’ pancake recipes in one post.  We hope that you enjoy them.
