
Romantic Dinner for Two or Planning to Feed A Crowd
During many years that I spent organising and cooking for weddings & events. This month was always our busiest welcoming clients for tastings in anticipation of the ‘big day’.
Steak or best end of lamb was always the popular choice. This is this method we would use to serve 120 + dining together.
If you are planning a romantic meal for two or want to get ahead for a crowd, we’ve shared our tips below:
To plan ahead:
* remove from fridge ten minutes before searing
*rub your preferred ‘high smoke point’ oil into the steak
*preheat frying pan until smoking hot
*sear all sides one steak at a time in hot pan
*make sure to fully ‘brown’ before turning
*cool quickly and chill in fridge

When you are ready to serve :
*remove steak from fridge to reach room temperature
*place steaks on a roasting tin and cook 4- 6 minutes for rare
*transfer to a warm plate, cover and rest for 4- 6 minutes
*carve on diagonal
*serve sauce on side
How to cook a steak – get ahead hacks & timings
If you prefer to cook and serve, these are guideline timings, but remember to bring steak to room temperature before cooking. The thickness of the steak will also make a difference to cooking times and allow plenty of time to REST the meat.

Blue 1 minute 1 ¼ minutes
Rare 1 ½ minutes 1 ¾ minutes
Medium rare 2 minutes 2 ¼ minutes
Medium 2 ¼ minutes 2 ¾ minutes
Fillet
Blue 1 ½ minutes 2 ¼ minutes
Rare 2 ¼ minutes 3 ¼ minutes
Medium rare 3 ¼ minutes 4 ¼ minutes
Medium 4 ½ minutes 5 minutes
